The absolute best of chilly winter days are the ones where you’re served a rich stew along with a freshly baked loaf of bread and butter. Here is a curry version that is designed to slow cook all day.
Rich Curry Beef Stew Recipe
2 pounds Stewing Beef ¼ cup Flour Salt to taste Pepper to taste 4 tablespoons Olive Oil 1 medium Onion, finely chopped 1 clove Garlic, minced
The first step is to put the flour, salt and pepper in a plastic bag and shake. Rinse the stewing beef and drop the chunks into the bag. Shake the bag until the meat chunks are well coated.
Heat your frying pan to medium heat, add olive oil then fry the stew beef until browned on all sides. Add the onion and garlic, fry until they start to brown. Remove from heat and set aside.
Add to your crock pot and mix well: 3 cups organic Beef Broth 2 tablespoons Tomato Paste 1 tablespoon Worcestershire Sauce
Add and mix well: The fried Stewing Beef mixture along with scraped juices from pan 1 pound Red Potatoes cut into chunks 3 large Carrots, sliced thick
Add and mix well: 1 teaspoon Thyme Leaves 1 teaspoon Rosemary Leaves (minced) 1 tablespoon Seasonest Curry Indian Spices 2 whole Bay Leaves
Cover your crock pot and set it to low. Let it cook for at least 7 hours. If you’re in a hurry you can set it to high and cook it for only 4 hours, but slower is always better.
Prior Evening Prep This can be prepped the evening before by keeping the liquid portion in a separate bowl. Follow instructions and stop before mixing in liquid. Store all in the refrigerator overnight. In the morning, add the liquid portion, mix, set the heat and go to work. Return home to a hot, hardy curried stew.
Serving Suggestions Stew needs something starchy along with it. Freshly baked bread is always a wonderful choice, especially when served with a cold pat of real butter.
