Who can resist hot, creamy cheese dip with loads of yummy ingredients giving it loads of flavor? This is such a fun dish and it’s easy to prepare.
Cheesy Beef Enchilada Dip
1-2 pounds ground beef
1 TBSP Seasonest Adobo
2 TSP Seasonest Original
1 can Enchilada Sauce
6-12 ounces Organic Valley Mexican Blend Shredded Cheese
2 Tomatoes, chopped
1/2 Onion, white or yellow and diced
1 fresh Jalapeno, diced
2-3 TBSP fresh Cilantro, chopped
3 ounces Lime juice
Salt and Pepper
Cook ground beef in an oven safe medium skillet over medium-high heat until cooked through. Stir occasionally.
Add in Seasonest Spices – Adobo and Original and stir. Break the meat into smaller chunks.
Stir in the enchilada sauce. Bring to a boil and remove from heat.
Add Seasonest Original as necessary, it should not need much if any.
In a separate bowl, make Pico de gallo by combining tomatoes, jalapenos, onions, cilantro, lime juice. Salt and pepper to taste. Mix well and set aside.
Sprinkle meat with cheese. Broil in over for 2 minutes or until cheese is bubbly and golden brown. Remove from oven.
Top the dip with the fresh pico de gallo.
Serve hot with warm tortilla chips.
