The key to making any deviled egg recipe is to use very fresh eggs. You might have to find someone who has laying hens or possible an organic food store. The reason eggs crack when you put them in boiling water is because they are extremely old – sellers put old eggs back in the carton. They are full of gas and crack or break open in hot water. Fresh eggs don’t do that. So, find some very fresh eggs for perfect Deviled Eggs.
Heat water to boiling in a 4 quart pot. Put an egg on a slotted spoon and slowly place it in the boiling water. Add 11 more for a total of 12. Boil for 15 minutes then promptly put the pot under cold running water.
Keep running the cold water into the pot until the eggs cool down. Turn water off and leave the eggs in cold water.
When eggs are completely cooled, cracked them and remove the shells.
Slice each egg the long way and carefully pick out the yolk with a fork. Be gentle and do not break the egg white.
Put the yolks in a small bowl and mash them.
Add: ¼ cup of Hellmann’s or Best Foods mayonnaise 1 teaspoon mustard ¼ teaspoon salt 3 dashes of Tabasco sauce
Mix until smooth.
Then stir in: 5 minced large green olives 1 tablespoon pickle relish
Generously spoon the egg yolk mixture back into the egg white halves or use a pastry bag to pipe the filing in. Arrange on a platter for serving.
